We were excited and delighted when local Chef, Food Writer and Food Stylist Dom Hoile agreed to create a Rosie Rose style summer salad. Especially when he has been so busy starting his new venture UR Living – a delicious and nutritious plant-based recipe club.

“A while back I, together with my wife Helen, made the decision to start eating a predominantly plant based diet following years of slowly reducing our meat and dairy consumption. We had read and watched a lot about climate change and the state of our planet and living more sustainably suddenly didn't seem like a choice but rather a necessity. Fast forward to Spring 2020 and lockdown, when I made the decision to launch UR Living and help others who wanted to eat more sustainably by taking away all barriers to plant based living,” explains Dom.

“Our mission is to simplify the process of eating more sustainably by providing the UR Living community with delicious, affordable, nutritious recipes that are quick and simple to make. And that’s exactly how I approached my Rosie Rose inspired Peach and Whipped Tofu Salad. It’s a simple quick recipe using ingredients readily available and easily sourced locally,” says Dom.

Dom prepared the Rosie Rose salad for our gastronomical summer picnic photoshoot with fellow local plant-based foodie Feed Me Momma, who made us a divine vegan raw chocolate cake . Sitting on our stunning Indian cotton kantha throws, wearing cool linen outfits chosen from our store in Chichester, our models Marilyn and Kate and Leila and Toni were blown away by the incredible flavours in the salad from the mouth-watering, perfectly ripe, peaches to the gorgeous Rose Water infused Whipped Tofu.

Dom continues: “With every recipe I develop, cook or style I endeavour to share and spread my love of food by creating a hugely positive experience. I’m taking the smiles on everyone’s faces in the pictures and the fact that Helen, my wife and the talented photographer on the shoot, didn’t bring any of the salad home from the shoot that I achieved my goal with my Rosie Rose inspired salad. Thank you Rosie Rose for inviting me to collaborate with you and to the amazing team that helped make the day happen."

Dom has kindly shared the recipe with us as an easy to read downloadable PDF.  You can download the recipe here and be sure to keep returning to our blog for more inspiring stories from our Summer Shoot.
